Grilled Orange Marinated Trout
Trout has a delicate flavor that works perfectly with the marinade made of sweet orange juice, honey, and white wine vinegar. After the fish marinates for 2 to 4 hours, it cooks up fast over medium-hot coals, in about 6 to 8 minutes per side.

Cedar Plank Salmon with Lemon Mint Pesto
I like to serve this salmon with angel hair pasta and sauteed zucchini, red onions, garlic, and lemon juice. Make sure to soak the cedar plank in salted water ahead of time; two hours should be sufficient. If the edges of the plank start to catch fire while you’re cooking, mist with water, or move to a cooler part of the grill.
